This healthy butter chicken recipe is simple, packed full of fibre and requires no lengthy cooking time. Serve with a side of greens for a nutritious, fuss-free dinner.
Ingredients
400g chicken breast
1 onion
400g can diced tomatoes
1⁄2 cup dry red lentils
2 tbs tandoori paste
1 cup water
1⁄3 cup greek yogurt
1tbs olive oil
Method
Finely dice the onion and set aside.
Dice the chicken into small cubes and place into a small bowl. Coat evenly with the tandoori paste and set aside. This step can be done the night before if you wish to marinate the chicken overnight.
Heat the olive oil in a non stick pan over a medium heat. Cook until the onion is translucent.
Add the chicken to the pan and brown.
Add the diced tomatoes, lentils and water and stir well. Reduce to a low heat and allow to simmer until cooked through. Stir occasionally.
Once cooked, remove from the heat and fold the Greek yogurt through the chicken mixture to create a creamy curry. Serve with steamed greens and poppadoms.
